Ingredients

  • 2 cups refined flour (maida)
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon ajwain (carom seeds)
  • 1/4 teaspoon kalonji (black cumin seeds)
  • 1/4 teaspoon garam masala powder (optional)
  • 1/4 cup ghee or oil
  • 1/2 cup lukewarm water

Instructions

  • Mix refined flour (maida), salt, baking powder, baking soda, ajwain, kalonji, garam masala and other ingredients of your choice.
  • In this mixture, add ghee or oil and mix until crumbly. Now, add in small intervals, add lukewarm water to form a dough.
  • Knead this dough for 5-7 minutes.
  • Once done, cover this dough with a small piece of cotton cloth and keep it rest for 30 minutes.
  • After 30 minutes, divide this dough into small balls and roll each one of them into a thin circle.
  • Prick this circle with a fork or any sharp object to prevent the puffing of the dough while frying.
  • Heat the oil in a kadhai or deep fryer.
  • Deep fry these mathris until they turn golden brown.
  • Store it in an airtight container.
