New Delhi: Annakoot is a mountain of food. It is a traditional sabzi made with all kinds of vegetables, served to God, especially during the Govardhan Puja a day after the Diwali festival. This dish symbolises the worship of Lord Krishna’s Govardhan Hill, commemorating his protection of villagers from torrential rains by lifting the hill.

Annakoot ki sabzi is made with a mix of seasonal vegetables, spices and also paneer (optional). The dish reflects gratitude and abundance.   • Assorted seasonal vegetables (pumpkin, brinjal, potatoes, carrots, beans, etc.)
  • Oil or ghee
  • Cumin seeds, asafoetida, green chillies, ginger, turmeric powder, red chilli powder
  • Coriander powder, garam masala, and salt
  • Fresh coriander for garnish

Steps to prepare at home:

  1. Wash all the vegetables and dice them properly.
  2. Take a large pan and add oil to it.
  3. Now add cumin seeds, hing, green chillies, and ginger.
  4. Add spices such as turmeric, red chilli powder, and salt while cooking.
  5. Once the vegetables are tender, add garam masala and coriander powder.
  6. For garnishing add one tablespoon ghee and fresh coriander.

This one-pot, flavourful meal represents the unity and bounty of the festival, making it a perfect offering and a delicious part of the celebration meal. Serve this as bhog or prasad and enjoy a feast.
